Sarina Sugar Shed 5 Year Cask Rum 700ml LIMITED EDITION

5 year Barrel Aged Rum  – Distiller’s Limited Edition (700ml, 40% ABV) is a special release from our distiller, Sarah-Jane Parrott, exhibiting all of the unique characteristics of North Queensland, bathed in sunshine and naturally cured. This Terroir-driven rum is influenced by the natural environment and climate where the sugarcane was grown, resulted in it’s unique flavours and aromas.

This rum was produced from locally grown sugarcane.  crushed and processed in the miniature sugar mill, this transforms the sugarcane juice into a thick, rich, earthy syrup during the sugarcane crushing season of 2016. Fermented and distilled in the tropical Summer of 2017, and barrelled in February of 2018. matured in ex-bourbon barrels and Australian Tawny casks before finished in a 50 litre Fernando De Castilla PX Sherry cask.

 A timeless classic Rum and Raisins.

Tasting Notes:

Exciting on the nose, fresh palate, rich oak, hints of molasses, marinated balsamic herbs and exotic spices, before detouring into a long finish that echoes of dried fruits and cherries.
